Phở, Vietnamese Noodle Soup
One of my best memories from my trip in Vietnam :)

Ingredients (4 persons):
A few VERY thin slices of beef
rice noodles for 4 persons
For the broth:
1 cube of beef broth
1 liter of water
1 small chunk of ginger
1 onion
2 pieces of star anise
a few cardamom seeds
1 teaspoon of coriander
1 cinnamon stick
2 tablespoons of fish sauce
1 teaspoon of sugar
salt
Toppings:
Some Thai basil
Lime
A few chili peppers
Some soybean sprouts
You can add other veggies of your choice
How to prepare:
I have a little secret to give my broth more taste: I quickly roast the onion and the ginger over my gas stove. Then I peel them, I crush the ginger, I cut the onion in two and I put in a saucepan with 1 liter of water. Then add all the other broth ingredients in the water, cover and cook for half an hour. Taste and add salt if necessary.
In another large saucepan, put a lot of water and cook the noodles. Drain and place an equal portion in each bowl.
Then put over all the toppings, slices of lime and the few slices of roast beef cut into very very thin slices.
Pour over one or two ladles of broth and serve immediately.
