Lemon squares

I am totally addicted to these lemon squares, this is the best recipe ever!

Ingredients (6 persons):

(about 12-14 lemon squares)
110 g of butter
1/8 cup of sugar
1 cup flour
1/2 teaspoon of salt

For the lemon frosting:
2 eggs
1 1/2 cup of sugar
1 tablespoon finely chopped lemon zest
1/3 cup of lemon juice
1/4 cup of flour

How to prepare:

Preheat the oven 180 ° C (th 6).


Melt the butter in a microwave. In a bowl, put the butter, the sugar, the flour and the salt and mix well.


Greese a rectangular baking pan with butter, line the bottom with parchment paper (cut to the right size) and pour in the batter.


Bake for 20 minutes or until the surface turns lightly brown.


 
In a mixer bowl, put the eggs and whisk them to break them up. Add the sugar and mix with an electric mixer.


Continue mixing until it turns pale yellow. Put the lemon zest and lemon juice. Mix gently with a fork. And finally, add the flour and continue to mix.


When the lemon squares are cooked, pour the lemon mixture on the top and bake for 15 to 20 minutes. Check with a toothpick (if it comes out clean the lemon squares are ready).


Remove from the oven and let cool. Cut into squares and dust with icing sugar.
