Ingredients (4 persons):

1 cup of galapong (soaked overnight glutinous rice and pounded)1 cup shreaded coconut3/4 cup of coconut milkcooking oil
For sugar coating:1/4 brown sugar1/2 cup coconut milk

How to prepare:

1. In a bowl mix together the galapong, coconut meat and coconut milk. Once the mixture is homogenous make a ball shaped form about the size of pingpong balls.


2. In a deep frying pan, put the cooking oil and let it reach the boiling point. Put half of your ball shaped gala pong and fry for about 7 minutes or until color turns to golden brown.


3. Pat them dry with paper towel.


4. In another casserole pour the coconut milk and brown sugar. Mix well and let it simmer until it becomes a thick caramel. Dip each fried carioca balls into this coconut caramel mixture.
