Adobong Kangkong with fried tofu

I always love kangkong and this is one of the best recipe we could try cooking them!

Difficulty: Easy

Ingredients (4 persons):

2 Bunches of kangkong: Pick the leaves and the tender stalks only (yield will be around 3 cups)
4 Cloves of garlic pounded
1 Small ginger, sliced
1 Big white onion sliced
3 Tablespoons of soy sauce
3 Tablespoons of vinegar
1 Tablespoon of tausi (Black beansà
Half a glass of water
2 Small blocks of firm type tofu (cut in cubes)
Some cooking oil

How to prepare:

1. Start by deep frying the tofu until golden brown. Strain them and pat dry the oil with paper towel.


2. In another casserole, put some cooking oil and start sauteing the ginger, garlic and onion.


3. Add the black beans and tofu. Continue cooking for few minutes.


4. Then add the kangkong. Continue cooking for another few minutes. Then add the soy sauce, vinegar some salt and pepper to taste. Add the water and let it simmer until kangkong stalks are cooked.


5. Serve with white rice.
