Pork Adobo

Ingredients (3 persons):
Half a kilo of your favorite part of pork (cut in cubes) 5 tablespoons of soy sauce 1 tablespoon of sugar3 tablespoons of white vinegar some peppercorn 4 cloves of garlic (pounded) some bay leaves a quarter of a cup of water diced potatoes (optional)
How to prepare:
Adobo is almost synonimous as Filipino's national dish. Each household normally have their own secret recipe for Adobo. This recipe of mine is a leaner version. I used lean meat and fat at all. This is a very easy dish to do and could be cooked in advance. Just reheat it before serving and could be eaten with steamed rice.
1. First is the marinating part. Mix all the ingredients except water and potatoes (optional) in a bowl and let it stand for at least thirty minutes.
2. After the desired length of marinating time, pour over this meat and the marinade sauce in a skillet. Add water and potatoes. Cover and let it simmer slowly for about twenty minutes.
3. You can continue cooking the adobo if you want it dry and almost fried. Others prefer it will some sauce, if that is your case continue cooking uncovered until sauce thickens.
