Lamb souvlaki with Greek salad
This recipe is great for a nice day outdoors.

Ingredients (6 persons):
Souvlaki:
500 g lamb cubes
5 tbsp olive oil
2 garlic cloves crushed
1 juice of lemon
1 red onion chopped
1 tsp dried oregano
1 tsp thyme fresh or dried chopped
1/2 tsp paprika
1/2 tsp cumin
salt and pepper to taste
Barbecue sticks
Cubes or squares of bell pepper, onion, zucchini
Salad:
1 head of romaine lettuce
2 tomatoes sliced
1/2 red onion sliced
1 cucumber cubes
Olives
Feta cheese
Lemon vinaigrette
Tzatziki:
Greek yogurt
Shredded or grated cucumber
Lemon juice
Salt to test
How to prepare:
Souvlaki:
1. Marinate the lamb in the olive oil together with the herbs, spices and lemon juice at least 30 minutes.
2. Soak BBQ sticks in water. Assemble lamb alternately with the cubed vegetables.
3. Grill until cooked.
Salad:
1. Mix all the ingredients together and drizzle with vinaigrette but not too much! Just enough.
Tzatziki:
1. Mix all the ingredients together and serve on the side.
